A few of my favorite parts of spring are hearing the birds sing their sweet songs once again, and collecting these sunny flowers of deelight. There are so many gifts this plant has to offer. Collecting the greens for juicing or salads, digging up the root for a decoction, or picking the flower heads to make wine, or lemonade... here is a great source for learning how to make dandelion lemonade!
One thing that always amazes me is natures perfect timing... These beauties pop up in the spring just the right time to do a liver cleanse! You can eat the greens in a delish salad, or run them thru your juicer.
My grandpa used to eat these all the time! I remember them sitting on the counter... if only i would have joined him back then:)
